Pan-seared Salmon with Broccolini & Spaghetti Squash
Yields 4 servings
Ingredients:
- 4 salmon filets
- 1 Tbsp parsley
- 2 Tbsp lemon juice
- 2 Tbsp butter
- 1 bunch broccolini (kale, swiss chard or broccoli work well, too)
- 2 Tbsp olive oil, divided
- 1 spaghetti squash, cut in half and with seeds removed
- Parmesan cheese
- Salt & pepper
Instructions:
- Preheat oven to 375F.
- Drizzle cut side of squash with 1 Tbsp olive oil, salt and pepper.
- Line a baking sheet with aluminum foil and place squash halves cut-side down on sheet. Bake for 50-60 minutes, or until soft to touch.
- Clean broccolini and place on baking sheet. Drizzle with 1 Tbsp olive oil, salt and pepper. Bake for 12-15 minutes.
- While broccolini and squash are cooking, season salmon with parsley, lemon juice, salt and pepper.
- Add butter to skillet on medium heat. Once melted, lay filets in pan. Flip filets after 3-4 minutes, or when bottom half of salmon is opaque. Cook for 3 more minutes.
- When squash is soft, remove and let cool for 5 minutes. Shred cooked squash with forks till it’s spaghetti-like. Top with cheese and serve with salmon and broccolini.
